The Harvest

Normally, at the beginning of spring, we are only able to gather Buckwheat Honey leftover from the previous fall season since the bees rest during the winter. Buckwheat honey is very medicinal yet has a pungent and slightly fermented taste. Not a fan favorite but still delicious. This year we have something very different. 

This year's harvest is special because on rare occasions special blends do occur. This year in Pennsylvania we had an abnormally mild and short winter. The mild winter allowed the bees more time to forage for nectar adding to the delicious flavor of this year's spring honey harvest. What a blessing to behold. 

All Raw organic honey will start the crystalizing around late October.  It appears thicker and as well as crystals like, this is only the honey preserving itself. Honey can last in the crystal form for more than 30 years, honey is a natural preservative.

Harvesting Process 

Honey Comb Frame Gathering:

We remove frames filled with honey from hives. We practice the safest methods to protect the bees from harm.

Extraction:

Never heated! Extracted from frames using a “Stainless Steel Manual Crank Honey Extractor”.

Filtering:

Filtered through a 400-600 micron filter for best quality.

Canning:

Poured into glass jars. Shrink wrap sealed.

Jar styles may vary due to jar suppliers.
